Margaret Louise Ekstrand, age 89, passed away on February 7, 2019 at Good Shepherd Hospital in Barrington, Illinois.  
Margaret was born February 25, 1929 to Gustaf Enoch and Hilda (Peterson) Ekstrand of Stromsburg, Nebraska.  Margaret was a Stromsburg High School graduate Class of 1947.  She went on to attend college at the University of Nebraska Lincoln majoring in economics.  She received her Bachelor of Science from UNL in 1951.  She continued her education at Kansas State University at Manhattan and it was from here she was awarded her Master of Science degree in institutional management.  As a registered dietician, she then interned at the University of Oregon Medical School.  Margaret lived in many cities such as Minneapolis, MN; Omaha, NE; Moscow, ID and Manhattan, KS before becoming a nutritionist for Gary Community School in Gary, IN. In retirement Margaret moved to Illinois where she resided until her passing.
Margaret enjoyed music, being a active member of South Park Baptist Church, and being an active part of the American Dietetic Association, American Association of University Women, and the Indiana and American School Food Service Association.  Traveling was another interest of Margaret as she visited Hawaii, Australia, Sweden and France but always held a special place in her heart for her Swedish hometown, Stromsburg.
Survivors include sisters-in-law Elaine Ekstrand and Carolyn Ekstrand of Stromsburg, nieces, nephews and a host of other relatives and friends.
She was preceded in death by her parents; two brothers, Jim and Arnold Ekstrand.
